Easy Raspberry Shortcake Recipe - Practically Homemade

Ingredients:

Shortcake:

1 tube refrigerated biscuits,

2 tsp sugar

Raspberry Whipped Cream:

8 oz whipped cream

1 can raspberry pastry & cake filling

The Cooking Experience:

        I've come to realize that I may have taken on more than I can handle by attempting to cook from scratch for my blog. Therefore, I've decided to focus on the basics of proper cooking. This means I'll be using pre-made ingredients as I gradually build my skills toward cooking from scratch. For those of you who, like me, may not have advanced cooking talents, this approach can serve as a refreshing alternative.

        I recently discovered a wonderfully simple shortcake recipe. The original version calls for raspberries, which is my preferred fruit. Although the book Reverence features strawberry shortcakes, I was thrilled to find this raspberry alternative, especially since I’m allergic to strawberries. Feel free to substitute any fruit pie filling you like in place of the raspberries; however, I will be sticking with raspberries for my treat.

        To make things easier for myself, I purchased a tube of biscuits and 8 oz of whipped cream. While the recipe includes instructions for homemade whipped cream, I opted to skip that step this time. I simply preheated my oven to 350°F, sprinkled 1/4 tsp of sugar on each biscuit, and baked them for 15 minutes.

        While the biscuits were baking, I combined the whipped cream with the raspberry pastry filling. Once the biscuits were done, I let them cool for about 5 minutes. After cooling, I carefully separated the tops from the bottoms of the biscuits and spooned 1/3 cup of the raspberry whipped cream onto each biscuit bottom before placing the tops back on. This creates a delightful dessert sandwich.

        The result was absolutely delicious! It was a quick and easy way to whip up a tasty raspberry shortcake.
