Best Fluffy Pancakes Recipe on the Internet (+Video)
Ingredients:
1 1/2 cups flour
2 1/2 tsp baking powder
1 1/4 cups milk
1 egg
3 tbsp butter, melted
2 tsp vanilla extract
The Cooking Experience:
My biggest fan, whom I affectionately refer to as my mother, got quite a laugh this week when I revealed my recipe choice for the week. The reason for her amusement? I’m not particularly fond of pancakes; I lean more towards French toast or crepes. So, the thought of making and eating pancakes wasn’t exactly my idea of a delightful breakfast.
However, I was determined to make the best of it. If I was going to indulge in my least favorite breakfast dish, I wanted to find a recipe that would elevate it to something delicious, even for my picky taste buds. I’m pleased to say this recipe did just that.
I've discovered that I prefer recipes which instruct combining the dry and wet ingredients separately before merging them. This method, along with pouring the dry ingredients through a sieve into my mixing bowl, helps eliminate those pesky lumps that I used to struggle to whisk away. It not only improves the cooking process but also enhances the overall taste, sparing me from biting into a clump of flour.
What sets this recipe apart from others I've tried is the addition of vanilla extract and the instruction to mix the ingredients just until there are no lumps of flour remaining. Overmixing can lead to dense pancakes instead of the desired fluffiness.
The cooking experience was quick and enjoyable, although I did have a minor mishap while flipping one pancake. I had made it too large, and it ended up folding over, causing the wet sides to stick together. Unfortunately, that one had to go in the trash.
Despite that little setback, the pancakes turned out fluffy and delicious. Even my son, who has never liked my pancakes before, really enjoyed these ones. This pancake recipe was a hit in our home, and I definitely plan to make them again in the future.
