Twinkie Recipe | How to Make Homemade Twinkies
Ingredients:
Vanilla Sponge:
2 eggs
2 teaspoons vanilla extract
2/3 cup granulated sugar
1/3 cup oil
1 cup flour
1 teaspoon baking powder
1/4 cup milk
1/8 teaspoon salt
Filling:
2 teaspoons hot water
1/4 teaspoon salt
1 jar (7 ounces) marshmallow creme
1/2 cup shortening
1/3 cup confections's sugar
1/2 teaspoon vanilla extract
The Cooking Experience:
I started by preheating my oven to 325°F and retrieved a small rubber mold designed to make six mini loaves of bread. Next, I whisked together 2 eggs, vanilla extract, and sugar until the mixture became foamy, which took about 4 minutes. After that, I added oil, flour, and salt, stirring gently until the ingredients were just moistened. I then incorporated the milk, mixing until the batter was smooth and free of lumps.
I filled each loaf mold a little over halfway and placed the mold on a pizza pan for stability, as it was quite flimsy. I set the timer for 15 minutes and waited. When the timer rang, I noticed that the batter was still somewhat wet, so I returned the molds to the oven for an additional 10 minutes. After this time, I checked the cakes again with a toothpick, but it did not come out clean. I decided to bake the twinkies for another 5 minutes, bringing the total baking time to 30 minutes, at which point the toothpick finally came out clean.
After letting the twinkies cool for about 45 minutes, I began preparing the filling. It was during this process that I realized I had forgotten to add baking soda to the batter earlier. I crossed my fingers, hoping it wouldn’t make too much of a difference. I mixed all the filling ingredients and transferred the mixture into a piping bag fitted with a cupcake injector tip. I injected the filling into three spots at the bottom of each twinkie.
While the twinkies turned out okay, I've never been a fan of them, and mine didn’t have the fluffy texture that store-bought ones usually do. I might give it another try in the future, making sure to include the baking powder this time to see if that makes a difference.
